BANANA BREAD PROTEIN PANCAKES {Lean Version}

A week or so ago, I decided to make my family some homemade banana muffins. I had no problem making them and resisting them seemed really easy. The thought of real white flour and real sugar made my skin crawl. I don't usually use those 2 ingredients, even when I'm making something for my kids. I try to stick to healthy ingredients, but I felt like my kids and husband deserved a little treat. What I didn't expect is how GOOD they would smell. Oh, the aroma's of banana's and cinnamon lingered through my house and it was so excruciatingly painful for me to deal with the smells. My stomach growled and my taste buds watered. Man, I could have killed to have just one bite of those yummy "unhealthy" muffins. But, I refrained! I was a good girl. Instead, I decided to whip up a homemade healthy protein packed banana pancake recipe for myself. I was able to enjoy the guilty pleasure as my muffins, without feeling guilty. Oh yeah baby!



BANANA BREAD PROTEIN PANCAKES {Lean Version}
Servings: 2 {Makes 4 pancakes}
Bake Skillet: 250 degrees
Bake Time: 20 minutes

Ingredients

1/2 cup old-fashioned oats
1/2 scoop Dymatize Elite Gourmet Protein Vanilla Whey
1 egg white
1/4 cup Fage Total 0% plain Greek yogurt
1/4 tsp baking powder
Pinch Sea Salt
1/4 banana, mashed
1/8 tsp cinnamon
1 TBS All-Natural sugar-free Applesauce
1 TBS Torani sugar-free Cinnamon & Brown Sugar syrup
1 Stevia packet
1/2 tsp vanilla extract
1 tsp walnuts, finely chopped

Directions
Mix all of your ingredients together till blended well. Preheat skillet to 250 degrees and lightly spray with Pam Olive Oil spray. Using a 1/4 measuring cup, scoop mixture onto skillet. Should make about 4 pancakes. Brown on both sides for 10 minutes each. Enjoy!

BANANA BREAD PROTEIN PANCAKES {Bulking Version}
Servings: 1 {Makes 4 pancakes}
Bake Skillet: 250 degrees

Ingredients

1 cup old-fashioned oats
1 scoop BSN Syntha-6 Banana Whey Protein
2 egg whites
1/2 cup Fage Total 0% plain Greek yogurt
1/2 tsp baking powder
1/2 large banana, mashed

2 TBS All-Natural Sugar-Free Applesauce

BANANA RUM CAKE PROTEIN OATMEAL {Bulking version}

I had some banana's that were starting to look a little old. Usually when that happens, the first thing I do is throw them in my freezer for future banana bread recipes. Instead, I decided to take my old banana {it was still in pretty good condition, but too soft for my liking to just eat it} and put it in my husband's oatmeal. Hmmm...I could do a banana bread oatmeal {recipe for that is coming soon}, but I felt like doing something a little more fun. So, I added rum extract and some other ingredients and my banana rum cake baked oatmeal was born. Say that 3 times real fast!



BANANA RUM CAKE BAKED OATMEAL {Bulking Version}
Servings: 1
Bake: 400 degrees
Bake Time: 30 to 35 minutes

Ingredients

1 cup old-fashioned oats
2 cups water
1 banana, medium, mashed
2 egg whites
2 TBS fat-free sour cream
1/2 cup fat-free cottage cheese
1/2 tsp baking powder
4 TBS Torani sugar-free brown sugar & cinnamon
1/2 tsp vanilla extract
2 tsp Splenda brown sugar
1/2 tsp rum extract
1/2 tsp butter extract
2 tsp pecans, finely chopped
2 stevia packets
pinch of sea salt

Directions
Mix all of your ingredients together in an oven safe bowl. Make sure your egg whites are whipped in well, you don't want egg white clumps after your oatmeal bakes. Bake your oatmeal at 400 degrees for 30 to 35 minutes. Pull out and stir. Wait 5 minutes or so to let it cool before eating. It's gonna be hot!

BANANA NUT FRENCH TOAST {bulking version}

My husband wanted a version of my banana nut french toast too. So, I whipped him up some with his whey protein and bread and taa daa! A MAN VERSION of banana nut french toast was born!



BANANA NUT FRENCH TOAST {bulking version}
Servings: 1

Ingredients

2 Slices 100% Whole Wheat Bread
1 scoop of BSN Whey Protein Syntha-6 Banana
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 cup egg whites
1 TBS Splenda Brown Sugar Blend
1 TBS walnuts, finely chopped

Directions
1.
Whip egg whites, vanilla, cinnamon, and whey protein together in a blender till smooth and there are no lumps left over. Dip whole wheat bread into mixture and cook on a greased skillet {I used Pam Olive Oil Cooking Spray} on medium heat. If you have any egg mixture left over, I like to pour the rest of it over the cooking toast. It will soak into the bread while it cooks.

2. While bread is cooking, top with Splenda brown sugar and walnuts. Once side is golden brown, flip over and cook opposite side. If you have greased your skillet, they shouldn't stick too bad. If they do stick, it's okay. It's because of the brown sugar. Just be patient and gradually lift off skillet with spatula.



TIP
Serve with sugar-free syrup, cinnamon and Splenda, spray butter or eat plain. The nutrition facts do not include your choice of topping, so don't forget to factor that in when you eat them.

I love the smell of banana bread baking in the oven. I was craving banana bread and decided to try making some banana nut french toast to help curb my craving. And you know what? It worked and tastes amazing! You've gotta try this!



BANANA NUT FRENCH TOAST {lean version}
Servings: 2

Ingredients

1/2 cup egg whites
1 scoop Dymatize Whey Elite Isolate Smooth Banana
1/2 tsp vanilla extract
1/4 tsp cinnamon
4 slices of 45 Calorie 100% Whole Wheat Sara Lee Bread
1 tsp Splenda Brown Sugar Blend
1 tsp walnuts, finely chopped

Directions
1.
Whip your egg whites, whey protein, vanilla, and cinnamon in a blender till smooth and there are no lumps are left over. Dip your bread into mixture and place on a greased {I used Pam Olive Oil cooking spray} skillet over medium heat. You may have some egg mixture left over. I like to pour it on top of the cooking bread. It'll soak in while they're cooking {waste not, want not!}

2. While toast is cooking, top with brown sugar and walnuts. Once the first side is golden brown, flip over and cook till brown on opposite side. If you greased your skillet well, they shouldn't stick to the pan too badly. If they do, it's okay, that's totally normal since you're cooking the brown sugar.

* Serve with Sugar Free syrup or eat plain. I like to top mine with a little extra cinnamon. The nutrition Facts do not include a topping. Don't forget to add that into your meal.
